How to make Heerekai Chutney ( Ridge Gourd Chutney)

We know Ridge Gourd is good for your health . We will show you how to make a tasty dish which can be had with rice, rotis, dosas, and even between 2 slices of bread. We will show you How to make Heerekai Chutney ( Ridge Gourd Chutney).



Ingridients :

Coconut   - 1 cup

Ridge gourd (heerekai)  - 1 medium sized

Green chillies  - 2 or 3 (add more if you want it spicier)

White sesame - 1tbsp

Coriander leaves - 2 tbsps

Hing - 1 pinch

Tamarind - 1 small lemon size

Jaggery - 1 small lemon size

Salt - according to taste


For seasoning:


Oil - 1 tbsp

Mustard - 1/2 tsp

Red chillies - 2 small

Curry leaves- 5-6 leaves


Procedure:


The top and bottom portion of the ridge gourd should be removed. Taste the ridge gourd. It should not be bitter. The skin should not be removed. It should be cut according to the picture below.

Heat oil in the kadai. Add a little mustard, green chillies and curry leaves. When the mustard crackles, add the cut ridge gourd into it. Keep it covered until it becomes slightly soft. Do not add water.

To this, add 1 big cup of coconut. Add roasted sesame seeds.
Add coriander leaves, jaggery, and soaked tamarind.
Turn off the gas. Let it cool.


Grind the mixture coarsely (like chutney).

Add salt according to taste.

For the seasoning,

Take oil in a kadai, add mustard seeds and red chillies.

When it crackles, pour it into the chutney.

Add one pinch of hing to the chutney.

Mix it well.
